Cafe Rio Crock Pot Sweet Pork
(you'll want to plan ahead because this takes about 18 hours)
5-6 pound pork roast
1 Tbsp. cumin
1 cup brown sugar
12 oz. bottle La Victoria taco sauce (you'll need another bottle to pour over burrito)
20 oz. bottle of Coca-Cola
Place pork roast in crock pot and fill about halfway up with water. Cook on low for 12 hours.
Drain off almost all the water, add all other ingredients. Cook another 4 hours on low. Shred pork, then cook another 2 hours.
Take cooked pork and place in tortilla, roll into burritos, place in pan, cover with La Victoria taco sauce (green) and mozarella cheese. Cook at 350 for about 20 minutes and enjoy.

Are you even kidding me? Does it really taste like Cafe Rio? Do you know my intense love for Cafe Rio sweet pork? It is borderline obsession.

Juge - It's not perfect -- but comes very close. Using the right green sauce and the right tortillas makes a big difference. I am totally in love with Cafe Rio as well. I think I have a recipe for their chicken, too, but I haven't tried it yet. I'll get back to you when I do.
Yum I love their pork. I've tried this recipe and it's really good. I'll tell ya a secret though, (one of my friends is a manager at CR), it doesn't have to cook quite that long. You can reduce the sauce on the stove when the pork is the doneness you want. Just leave the roast in the crockpot, drain it off after the 4 hour cooking and reduce it on the stove. Shred and then add the thicker sauce to the pork and serve.
